mmmmm.... beef.....

i had the yummiest leftovers for supper today.

at the women's retreat last weekend, the topic of meal planning came up. a few of us youngins admitted that, even though we have slow cookers, we've never attempted to make a beef or ham roast. i have made one chicken in my slow cooker and a few in a roaster in the oven. my biggest thing was that i don't know what kind of beef to buy. do you need to buy a more expensive cut to make sure it turns out? we were convinced (coerced?) by the other ladies to go out this week and buy a blade roast and toss it in the slow cooker, with a cup of ketchup, a package of onion soup mix and a can of coke. so that's what i did yesterday. i bought a hunk of beef, put half in the freezer, mixed up half of that recipe and into the slow cooker it went. it hit 27 degrees outside again, so i put the slow cooker outside on the deck to keep my house cool.

and let me tell you. it was DEEELISH! and so easy! just as good the next day. i didn't feel like having the typical baked potatoes with it, so i made twice-baked potatoes (thanks to neysa's idea posted on supper starters).


and next time, i think i'll venture out and buy a ham.

I LOVE my crock pot and use it lots- especially on piano lesson days. So, did you buy the expensive beef? I don't eat beef, but make it for Dan and once in a blue moon I buy the right kind.

You make it sound so easy!! Now I'm going to have to do something like that. I don't have any coke in the house. . . I guess I should go out and buy a can.

Kerri, the ladies said that apparently a blade roast is the cheapest of the good cuts. Mine was about 2 kg (about 4.5 lbs), and it cost about $20. I put half in the freezer and with the half that I made, we ate a meal + leftovers for a few more meals.

I've often done the SUPER cheap roasts at Safeway (the ones that are going close to their best before dates) and when cooked long and low enough - it gets to be just fine. I usually mix some onion soup mix, golden mushroom soup, and a bit of apple juice. I bought a picnic ham at Sobey's once during Dollar Days for $1 a pound. It's cured, so just needs to be warmed. Did a honey mustard glaze, and it was wonderful. Cheap and great. Happy venturing into the land of all things slow-cooker!
