so you're having friends over and you want to make something new and exciting. and you can't find anything at kraftcanada.com. well, my mom gave me a recipe awhile back and i was a little nervous to try it. i mean, when it has "veggie" in the name i have this idea that it's gonna hard and have all sorts of weird things in it. don't get me wrong, i love my veggies. and i like to make meals without meat, because, well, it's cheaper. but never had i bought frozen spinach or ricotta cheese before [we like our spinach raw, the way God made it].
okay try this one out:
Veggie Lasagna Roll-ups
12 lasagna noodles, cooked [and cooled cuz its easier that way]
mix together:
2 C creamed ricotta cheese
2 C mozzarella, shredded
1/2 C parmesan cheese
2 eggs
1 pkg frozen spinach, chopped, thawed, drained
1/4 tsp s + p
1/4 tsp nutmeg
-spoon onto lasagna noodle, roll, place seam side down in greased 9x13.
-pour 680 ml tomato sauce overtop.
-bake, covered, 350 degrees, for 25 min.
-uncover, bake 15 min.
white sauce (mix together and thicken and serve over serving of lasagna roll-up thinger):
2 T margerine
2 T flour
2 C milk
some s + p, nutmeg
we had 2 of our favourite people over for supper on saturday and they were my guinea pigs. it was quite delicious if i do say so myself.
